Tomato Sauce
Ingredients
- Tomatoes 1kg
- Onions 1, chopped
- Carrots 1, chopped
- Garlic 4 cloves, chopped
- Red wine vinegar 1/2 cup
- Water
- Cinnamon 1 teaspoon
- Sweet paprika 1/2 tablespoon
- Clove powder 1/2 teaspoon
- Allspice x 3 ground
- Sugar brown xx g??
Method
- Remove stems from tomatoes and wash (weigh to adjust ingredients) and cut into quarters
- Add to pot, tomatoes, carrots, onion, garlic, red wine vinegar, cinnamon, paprike, cloves and allspice
- Bring to boil, add water to avoid burning if required, then reduce heat and cover and simmer for about 1 hour
- Puree the mixture (let cool for safety) in a food processor then push through a sieve back into the rinsed pot
- Stir in sugar and bring back to the boil and boil stirring continuously for 5 to 10 minutes
- Pour into sterilized jars and seal as per normal preservation guidelines
Quantities are approx and I don’t recommend making 1KG worth, might as well do 4KG or more at a time.
