Tomato Paste

Using cone-shaped hessian bags filled with mixture and hung from a ladder over a tray to let water leak out.

Ingredients

Method

  1. Remove stems from tomatoes and wash
  2. Cut tomatoes in half and weigh (to adjust ingredients) then place in large pot
  3. Cover with water and boil for 2 or 3 hours
  4. In stages, place in food processor with chilli and blend
  5. Push through a sieve
  6. Put back in pot and bring to boil and add salt, pepper and citric acid
  7. Boil to reduce liquid
  8. Remove from heat and let cool
  9. Pour into material bags/sieves and hand over trays for 2 to 3 days letting water/juice leak out
