Tomato Paste
Using cone-shaped hessian bags filled with mixture and hung from a ladder over a tray to let water leak out.
Ingredients
- Tomatoes (5.75kg)
- Chilli’s x 4 chopped finely
- Salt – 2 Tbsp
- Pepper – 1 tsp
- Citric acid – 1 tsp
- Water (to cover)
Method
- Remove stems from tomatoes and wash
- Cut tomatoes in half and weigh (to adjust ingredients) then place in large pot
- Cover with water and boil for 2 or 3 hours
- In stages, place in food processor with chilli and blend
- Push through a sieve
- Put back in pot and bring to boil and add salt, pepper and citric acid
- Boil to reduce liquid
- Remove from heat and let cool
- Pour into material bags/sieves and hand over trays for 2 to 3 days letting water/juice leak out
