Quichés - Pastryless
Originally from Leigh King Roach and slowly adapted.
Base Ingredients
- 4 eggs
- 2 cups milk
- salt & pepper to taste
- ½ cup self-raising flour
- 120 grams butter
- ½ cup cream
- dash of Worcestershire
Fillings
Standard version
- 5 large rashers of bacon – diced
- 2 small green peppers (capsicums) – diced
- 1 small onion – diced
- 1 can corn kernels (large) – drained
- 2 cups grated cheddar cheese
Salmon version
- 1 can pink salmon – 440 grams – drained and flaked
- 4 rashers of bacon – diced
- 1 cup of Parmesan cheese
Method
- Lightly grease 2 Quiche or pie dishes and scatter fillings over the bases.
- Mix base ingredients together thoroughly and pour over top.
- Bake in moderate oven (180° Celsius, 350° Fahrenheit) for approximately 30 minutes or until lightly browned and puffy.
- Serve with salad.
