Quiché Lorraine - Pastryless

Actually called Crustless Quiché Lorraine.
Lots of eggs.
Ingredients
- Cooking oil spray
- 2 onions, finely chopped
- 125g shortcut bacon, chopped
- 8 eggs
- 300ml cream
- 2 tbs finely chopped fresh chives
- 1 cup grated tasty cheese
- Salt and pepper, to taste
- 2 tomatoes, thinly sliced
- Extra fine chopped chives, to garnish
- Garden salad, to serve
Method
- Spray a Quiché dish with oil

Lightly spray a heated frying pan with oil.
Add onions and bacon.
Cook, stirring, until onions are soft.
Remove mixture from pan, and spread it over the base of the Quiché dish.

Place eggs, cream, chives and cheese in a large jug.
Whisk to combine.
Season.
Pour over the onion mixture.
Arrange tomatoes on top.

Cook in a moderate oven (180C) for 40 minutes, or until just set and golden.
Stand for 15 minutes before serving.

Garnish with chopped chives.
Serve, warm or cold with salad.
