Ceviche
Ceviche is a Peruvian dish typically made from fresh raw fish cured in fresh citrus
juices, most commonly lime or lemon.
Ingredients
- 1.2kg King Dorey (white fish)
- 15 medium sized Lemons (enough to cover the fish)
- 10 Chili’s (careful)
- bunch Coriander
- 3 Red Onions
- 2 Capsicums
- Ground Cumin
- Garlic
- Salt
Method
- Cut fish into 15 mm cubes and place in bowl.
- Cover fish with lemon juice
- Chop very very finely the coriander, chili’s, red onions, and capsicum
- Add olive oil, mix, cover and refrigerate overnight
- The lemon (citrus) will cure the fish into a cooked like texture
Pedros Chili Sauce
Ingredients
- Red Onions
- Chillies
- Capsicum
- Coriander
- Garlic
Method
- Combine all ingredients into food processor but do not over blend
