Cabbage Rolls
Thanks Adam for his Polish style cabbage rolls.
Ingredients
- 1 full Cabbage
- 500gm minced beef
- 2 cups rice
- 4 rashes bacon, diced
- 200gm mushrooms, diced
- 1 large onion, diced
- garlic cloves, diced
- 500gm potatoes, peeled & diced
- 100ml Cream
- Beef stock cubes
- Salt and pepper
Method
- De-core cabbage, remove large out leaves and keep aside
- Bring large pot of water boil and place cabbage in boiling water for about 2 minutes
- Peel of 4 outer leaves, boil again and repeat until all leaves are removed
- Boil rice
- In a large frying pan combine and cook; bacon, mushroom, onion
- Add garlic, beef cubes, rice, cream and cook for another 5 minutes
- Remove from heat and stir through the cooked diced potatoes
- Fill each cabbage leaf with at least 1 tablespoon of mixture and roll up
- Place uncooked leaves in a large saucepan to cover base and place cabbage rolls onto these leaves with half a cup of water. Put a lid on and cook/steam for about 1/2 hour.
- Remove pot from stove and let cool.
- In a frying pan with olive oil, fry rolls for about 2 to 3 minutes each side until brown
- Put in fridge, tastes best next day, reheat in oven or microwave, freeze in foil
