Biscuits - Apple & Spice
From the back of Kellogg's Rice Bubbles box.
Ingredients
- 1 1/4 cups firmly packed brown sugar
- 1/3 cup margarine (I never use margarine so butter is better 80 grams)
- 1/4 cup apple puree
- 1/4 cup honey
- 2 eggs whites, beaten lightly
- 2 1/2 cups self-raising flour
- 3 cups Rice Bubbles (crushed to about 1 cup)
- 1 teaspoon ground ginger
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground cloves
Method
- Preheat oven to 180°C
- Beat sugar and margarine (butter) in a small bowl with an electric mixer until combined and light in colour. (nutri-bullet is a good tool for this)
- Transfer to a large bowl.
- Stir in apple puree, honey and egg whites. (this mixture may appear curdled at this stage)
- In another bowl combine crushed Rice Bubbles, sifted flour and spices, then add to the main bowl and mix until well combined
- Roll level tablespoons of mixture into balls, place then 5cm apart on baking trays line with baking paper.
- Press down lightly with a fork.
- Bake in oven for about 8 to 12 minutes or until lightly browned.
- Cool on wire racks.
- Store in airtight container.
