Banana Loaf
Ingredients
- 3 ripe bananas
- 1/2 cup sugar
- 1 egg
- 1 cup self raising flour
- Chocolate buds (optional)
Method
- Mash together bananas, sugar and egg – leave in a warm spot for at least 10 minutes until bubbles appear on the surface.
- Add self raising flour and mix well

Pour into a well greased loaf tin and cook in a moderate oven (350 degrees fahrenheit or 180 degrees celsius) for 25-30 minutes (actually I tend to cook for 40-50 minutes).
Test with cake tester.
- Stand in tin for 5 minutes before turning onto cooling tray.
- Slice, butter, eat and enjoy.
