Banana Loaf

Method

  1. Mash together bananas, sugar and egg – leave in a warm spot for at least 10 minutes until bubbles appear on the surface.
  2. Add self raising flour and mix well
  3. Pour into a well greased loaf tin and cook in a moderate oven (350 degrees fahrenheit or 180 degrees celsius) for 25-30 minutes (actually I tend to cook for 40-50 minutes).  Test with cake tester.
  4. Stand in tin for 5 minutes before turning onto cooling tray.
  5. Slice, butter, eat and enjoy.
