Almond Biscotti

Biscotti known also as cantucci, are Italian almond biscuits that originated in the Tuscan city of Prato.

Ingredients

Method

  1. Set oven to 180 degrees celsius
  2. Line a loaf pan with baking paper
  3. Beat egg whites until stiff peaks form
  4. Fold in castor sugar
  5. Fold in flour & almonds
  6. Place in loaf tin/pan bake for 50 to 60 minutes
  7. Cool on cake cooler
  8. Slice thinly with a bread knife
  9. Place on oven tray to bake a further 6-8 minutes
  10. Let cool completely then jar.
