Almond Biscotti
Biscotti known also as cantucci, are Italian almond biscuits that originated in the Tuscan city of Prato.
Ingredients
- 4 egg whites
- 1/2 cup Castor Sugar
- 1 cup Plain Flour
- 1 cup Whole Almonds with skin on, extra if desired
Method
- Set oven to 180 degrees celsius
- Line a loaf pan with baking paper
- Beat egg whites until stiff peaks form
- Fold in castor sugar
- Fold in flour & almonds
- Place in loaf tin/pan bake for 50 to 60 minutes
- Cool on cake cooler
- Slice thinly with a bread knife
- Place on oven tray to bake a further 6-8 minutes
- Let cool completely then jar.
